Rajasthani-style Lentil Curry with Crumbled Lentils and Baked Wheat Balls

Daal Baati Churma is a quintessential Rajasthani dish that combines three distinct elements: crispy baatis (baked wheat balls), flavorful dal (lentil curry) and sweet churma (crumbled mixture.) The baatis are baked to golden perfection and enjoyed with dal infused with aromatic spices.

  • For Baati (Baked Wheat Rolls):

    • Whole wheat flour - 2 cups
    • Sooji (semolina) - 1/2 cup
    • Ghee (clarified butter) - 1/2 cup
    • Salt - to taste
    • Water - as needed

    For Churma (Sweet Crumbled Mixture):

    • Whole wheat flour - 1 cup
    • Ghee (clarified butter) - 1/4 cup
    • Jaggery or Sugar - 1/2 cup, powdered
    • Cardamom powder - 1/2 teaspoon
    • Mixed nuts (almonds, cashews, pistachios) - 2 tablespoons, chopped
  • For Dal (Lentil Curry):

    • Tuvar Dal (split yellow lentils) - 1 cup
    • Namox Turmeric powder - 1/2 teaspoon
    • Salt - to taste
    • Tomato - 1, chopped
    • Onion - 1, chopped
    • Green chillies - 2-3, chopped
    • Namox Cumin seeds - 1 teaspoon
    • Namox Mustard seeds - 1/2 teaspoon
    • Hing (asafoetida) - a pinch
    • Namox Red Chilli powder - 1/2 teaspoon
    • Namox Garam Masala - 1/2 teaspoon
    • Ghee (clarified butter) - 1 tablespoon
    • Fresh coriander leaves - for garnish

Cooking the Dal Baati Churma:

Preparing the Dal (Lentil Curry):

  • Rinse the tuvar dal and cook it with Namox Turmeric powder, salt and enough water until soft and mushy.

Prepare the Tadka (Tempering):

  • Heat ghee in a pan. 
  • Add Namox Cumin seeds, Namox Mustard seeds and let them splutter.
  • Add asafoetida, chopped onions, green chilies and sauté until the onions turn golden brown.

Add Tomatoes and Spices:

  • Add chopped tomatoes, Namox Red Chilli powder and Namox Garam Masala.
  • Cook until tomatoes are soft and the oil starts to separate.

Combine with Cooked Dal:

  • Add the cooked dal to the pan and mix well. Adjust consistency with water as needed.
  • Simmer for 5-10 minutes.

Preparing the Baati (Baked Wheat Balls):

  • In a large mixing bowl, combine whole wheat flour, semolina, salt and ghee.
  • Gradually add water and knead into a firm dough. Cover and let it rest for 20-30 minutes.
  • Preheat the oven to 180°C (350°F.)
  • Divide the dough into equal-sized portions and shape them into baatis (round balls.)
  • Place them on a baking sheet and bake for 40-45 minutes or until they are golden brown and cooked through.

Preparing the Churma:

  • In a bowl, mix whole wheat flour with melted ghee.
  • Add water gradually and knead into a stiff dough.
  • Preheat the oven to 180°C (350°F.)
  • Divide the dough into small portions and shape them into small balls or patties.
  • Place them on a baking sheet and bake for 20-25 minutes or until they are golden brown and crispy.
  • Allow the baked dough balls to cool completely. Then, crumble them into a coarse mixture using your hands or a food processor.
  • Heat ghee in a pan. Add the crumbled mixture and roast it lightly.
  • Add powdered jaggery or sugar, cardamom powder and chopped nuts. Mix well until everything is combined and the jaggery/sugar melts.
  • Garnish the dal with fresh coriander leaves before serving.
